Dr. Goff is probably the biggest expert in ice cream science and technology, with over 35 years of experience in the field. He serves as a professor in the Department of Food Science at the University of Guelph, Canada. He has extensively researched the structure, formulation, and processing of ice cream and other frozen desserts. He has authored and co-authored the 8th edition of Ice Creamand the Ice Cream Technology e-Book. He has taught ice cream technology courses internationally.
